HOW TO MAKE LEMON CURD
Ingredients
4 egg yolks
6 tablespoons of unsalted butter
⅛ teaspoon of salt
⅓ cup lemon juice
1 tablespoon of lemon zest
⅔ cup of white sugar
You need:
A pot
A glass bowl
A Spatula
Measuring cup and spoons
Method:
Fill up your pot with water 3-4 cm high and boil the water. Turn it down to a simmer and place your pot on top of the simmering water.
Place sugar, lemon juice, egg yolks, lemon zest and salt in the bowl.
Place the bowl on top of the pot and whisk for 10 minutes, until the curd resembles the consistency of hollandaise sauce.
Carefully take the bowl off the pot and add butter. Continue to whisk until it melts.
Pour curd into clean jars and put baking paper over the curd to stop a skin forming.
Leave out until the curd has cooled and set, then put the lids on and refrigerate.
Hi Georgie! Thanks for sharing your recipe. We love homemade lemon curd at our house but our lemon tree doesn't have any lemons. Have you made this recipe? I would love to see a photo.
